White tea

White teas (Bai cha) are a bit of a mythical and elusive term. Like so many teas, they originate from the Fujian province of China and the original method is the gentlest of all tea processes. Basically, the tea leaves are simply harvested and dried. They have not been heated or rolled like typical green teas. This is what sets them apart from other teas and creates the purest and most natural tea flavor you can find in the tea world. What white teas have in common is a certain sweetness.

White teas can be divided into two types that differ greatly from each other: those that consist only of buds, silver needles, and those that also consist of some leaves. The difference is great in character, color and not least in price.

Alla vita teer bör bryggas på en temperatur kring 70 till 80 grader. Teer gjorda på knoppar bör dra lite längre - mellan 5 till 10 minuter för att utveckla sin smak fullt ut - medan vita teer där det ingår både blad och knoppar, endast behöver bryggas 2-3 minuter. Prova gärna att dricka ditt vita te lite avsvalnat - i många fall utvecklas deras smak lite extra när temperaturen sjunker.
